zucchini Frittata
It’s that time of year again, spring time when the grocery stores begin to stock all their luscious green vegetables. Also the time where many of us are coming out of our “winter hibernation” and ready to start eating healthy again. As you all know, Nonnina is all about healthy eating and one of her favourite go-to lunch dishes is this quick and easy zucchini frittata!
Packed full of protein, healthy fat and fiber this dish is bursting with spring flavours and ready in under 30 minutes!
Let's get right to it!
INGREDIENTS:
4 zucchini
1 shallot
1 clove of garlic
8 eggs
3/4 cup grated parmesan cheese
1 Tbsp olive oil
1 Tbsp parsley
Salt and pepper to taste
DIRECTIONS:
Preheat the oven to 400° F.
Cut up zucchini in to 1/4 inch rounds.
In an oven proof skillet, sauté diced shallots and garlic in the olive oil until translucent.
Add zucchini and sauté for about 10 minutes until zucchini are cooked through but not mushy.
In a separate bowl, combine eggs, parmesan cheese and parsley and beat until well mixed.
Pour over zucchini and keep on heat until it starts to bubble through, about 5 minutes.
Remove from stove top and place skillet in the oven for about 15 minutes until fully cooked.
Remove from oven and let sit for 5 minutes before turning over into a plate.
Slice and serve!
