La Cicerchiata

Ingredients:

Dough

  • 4 eggs
  • 3 tbsp of sugar
  • 1/2 cup of extra virgin olive oil
  • 1 tbsp of your liquor of choice
  • 3 cups of all purpose flour
  • Canola oil for deep frying

For the Assembly

  • 1 1/2 cup of honey
  • Sprinkles

Preparation

1. In a food processor or a mixer, add the eggs, sugar, olive oil, and liqour.  Pulse until all combined.

2.  Add the flour and continue to pulse until the dough is formed.

3. Bring the dough to a flat surface and knead until smooth, adding flour as needed.

4. Break off about a 2 cm piece of dough and roll it into a ball shape in your hands.

5. In a pan, fill it with sunflower or canola oil, and begin frying the dough balls in batches until golden.

6. Remove the dough balls with a slotted spoon and drain on paper towels.

7.  In a separate pan, heat up the honey and drop the dough balls into the pan, covering each with honey.

8. To finish, spoon a bunch of dough balls into a cupcake liner and sprinkle with multi coloured sprinkles.
